Serves 8 – 10
Ingredients:
- 1 Large pork belly or leg of pork
- 10 – 12 Peeled potatoes – cut in half
- 8 – 10 Sweet potatoes (yams) – peeled and cut in half
- 8 – 10 Green apples – unpeeled and cut into quarters
- Salt
- 500 – 750ml Appletizer (or a mix of club soda and apple juice)
- Cloves
Method:
- Salt the pork and leave in the refrigerator overnight
- Spike cloves into the skin of the pork
- Place potatoes, sweet potatoes and apple into the roasting pan
- Pour apple juice over the vegetables until it is half way up the veg
- Place the pork on top of the vegetables
- Bake (with lid off) at 180C for 2 hours
- Keep adding apple juice to the mixture if you see it dries up
- Once cooked, remove crackling and keep it on the side (not all of the crackling will be fully cooked)
- Break up the meat (you should not need a knife to do this) and cover with tinfoil to keep it warm
- Vegetables into a serving dish and cover to keep warm
- Just before serving, put crackling under the grill
- Cut crackling into pieces and place on top of pork to serve
Can be served with apple sauce and of course your other favourite vegetables.
