Milk Tart

Serves 6 – 8

Melktert is Afrikaans for milk tart and is a dessert which has a sweet pastry crust and a creamy

custard filling made from eggs, flour, milk and sugar.

 

Pastry Ingredients:

  • ½ Pound melted butter
  • 3 Tablespoons sugar
  • 1 Heaped measure jug of flour

 

Filling Ingredients:

  • 4 ½ (1125ml) Cups milk
  • 3 Tablespoons butter
  • 1 Egg and 2 egg yolks
  • ½ Cup sugar
  • 4 Tablespoons flour,
  • 3 Tablespoons mazena (corn flour)
  • Pinch of salt
  • 1 Teaspoon (5ml) Vanilla essence
  • 1 Teaspoon (5ml) Almond essence
  • 2 Stiffly beaten egg whites

 

Method:

  • Mix the pastry ingredients together and bake at 180C (350 F) until golden brown
  • Boil the milk and butter
  • In a separate dish, beat the egg and egg yolks
  • Add sugar to the egg mixture and beat
  • Sift flour, mazena and salt into the egg mixture, and fold
  • Slowly pour milk into the egg mixture and beat fast
  • Add vanilla and almond essence
  • Add egg whites and fold
  • Pour into pastry case and sprinkle with cinnamon

 

Allow to cool, and serve.
