Serves 6 – 8
Melktert is Afrikaans for milk tart and is a dessert which has a sweet pastry crust and a creamy
custard filling made from eggs, flour, milk and sugar.
Pastry Ingredients:
- ½ Pound melted butter
- 3 Tablespoons sugar
- 1 Heaped measure jug of flour
Filling Ingredients:
- 4 ½ (1125ml) Cups milk
- 3 Tablespoons butter
- 1 Egg and 2 egg yolks
- ½ Cup sugar
- 4 Tablespoons flour,
- 3 Tablespoons mazena (corn flour)
- Pinch of salt
- 1 Teaspoon (5ml) Vanilla essence
- 1 Teaspoon (5ml) Almond essence
- 2 Stiffly beaten egg whites
Method:
- Mix the pastry ingredients together and bake at 180C (350 F) until golden brown
- Boil the milk and butter
- In a separate dish, beat the egg and egg yolks
- Add sugar to the egg mixture and beat
- Sift flour, mazena and salt into the egg mixture, and fold
- Slowly pour milk into the egg mixture and beat fast
- Add vanilla and almond essence
- Add egg whites and fold
- Pour into pastry case and sprinkle with cinnamon
Allow to cool, and serve.
